Fish on the Roll started with one stubborn idea: that great sushi shouldn’t be trapped behind a reservation and a white tablecloth. Our chef trained the traditional way, then did something a little unhinged and put it all on wheels.
Today that matte-black truck is a familiar sight around the Treasure Valley. Same knife skills, same sushi-grade fish, just parked wherever the good times are: a brewery lot, a night market, or your own backyard.
